Ayam Pedas Kemangi

A vibrant, fiery stir-fry that is a favorite in Indonesian households. Tender pieces of chicken are simmered in a rich paste of red chilies, shallots, and turmeric, then finished with a generous handful of fresh Kemangi (lemon basil). The result is a perfect balance of bold heat and refreshing citrusy notes.

  1. Marinate the chicken with lime juice and salt. Stir and marinate for a few moments.
  2. Pound the candlenuts. Slice the garlic, shallot, turmeric, and aromatic ginger. Add into the blender.
  3. Add Thai chili and some oil, then blend until smooth. Then, sauté until oily.
  4. Add lemongrass, ginger, bay leaf, and lime leaf. Cook until fragrant and browned.
  5. Add the chicken in. Cook for a moment until a bit browned, then add water.
  6. Season with salt, sugar, and stock powder. Stir, then braise for 15-20 minutes.
  7. Add tomato, green onions, and Thai chili. Stir and cook for a moment.
  8. Add lemon basil. Stir well, then turn the heat off.
  9. Spicy Lemon Basil Chicken is ready to serve.
